Gut Health Salad with Dolmades and 3-Bean Mix

Serves 1
Vegan, Dairy-Free
Ingredients:
for the salad
• 1 cup spinach
• 4 lettuce leaves, sliced
• 2 kale leaves, chopped
• 1 fresh carrot, grated
• 2 tomatoes, diced
• 1 cucumber, diced
• a small slice of cabbage
• 4 radishes, sliced
•2 Tbsp sauerkraut
• 1x 400g 4-beans mix
• 4 Tbsp hummus
• 1 Tbsp hemp seeds
• 2 Tbsp sunflower seeds
• 2 Tbsp pumpkin seeds
• 2 Tbsp slivered almonds
• 8 olives
• 1/2 onion
• 1/2 capsicum, cut in strips
• 2 sliced mushrooms
• 8 dolmades
for the dressing
• 1 clove garlic, crushed
• 1 Tbsp olive oil
• 2 tsp lemon juice
• 2 tsp maple syrup
• salt
Method:
1. Serve all the vegetable ingredients in the same bowl. Serve with dressing if desired. (If you include the fermented vegetables and olives and hummus, I find that dressing is not necessary for flavour.)
2. Add the dolmades and the bean mix. Enjoy!
